2 quarts apple cider
1 cup sea salt
1 cup soy sauce
2 cups Wood Stove Mulling Syrup
6 garlic cloves, smashed
1.5 gallons of water
Combine all of the ingredients except for the water in a pot, and bring to a boil. Stir frequently.
Let the hot mixture cool to room temperature, and then add the 1.5 gallons of cold water.
Submerge the turkey in the brine, cover, and allow it to soak overnight.
Remove the turkey from the brine and pat dry with a paper towel.
Roast the turkey until it is FULLY done. While roasting, place one cup of additional cider and two cups of water into the bottom of the pan.
